Who fancies Indian tonight? I know I do (but then it's not often I refuse an offer of food).
Ok, ok, let me put it another way? Who fancies an delicious Indian feast bursting at the seams with chapatis, spiced chicken, mango chutney & fresh salads? You do? Great - then it's your lucky day. What we have here is a healthy version of your standard Indian take-away and it's a goodun! Don't let the fairly longish list of ingredients put you off because it's totally worth the effort and in actual fact this recipe is super easy & quick. I'd much rather treat myself to this than order take out any day. It's perfect food for kicking back on a Friday night with a beer or as a fresh and tasty lunch time treat for the family. We've done it both ways and it's been just as good both times AND the kids love it. Winner!
For four people, you will need: recipe from Bill Granger Easy
- 310g greek yogurt - 2 tsp paprika - 1 tsp ground cumin - 1 tsp ground coriander - 1 tsp turmeric - 2 large garlic cloves, minced - 3cm piece of ginger, peeled & grated - 4 chicken breasts flattened with a mallet - 1/2 long cucumber, sliced & then quartered - 1/2 red onion, thinly sliced - 1 red chilli (optional) - a handful of mint leaves - a handful of coriander leaves - 1 lemon cut into wedges - 8 chapatis (or wholemeal wraps would work) - natural yoghurt
and you will need to do this:
1. First up, mix your greek yoghurt with the cumin, coriander, turmeric, garlic & ginger. Make sure you do this in a bowl large enough to accommodate the chicken breasts.
2.Add the chicken breasts & coat to cover completely. Cover & place in the fridge for 30 minutes to marinate. 3. Next up, make the accompanying salad by placing your cucumber, chilli & red onion in a bowl, mixing gently to combine. Set aside.
4. When your 30 minutes is up, remove the chicken from the fridge. Heat a griddle pan on a high heat and remove the chicken from the marinade. Cook for 5 minutes on each side or until cooked through. 5. When done, slice your chicken and take to the table.
6. Warm 8 chapatis for 45 seconds in the microwave and serve with the chicken alongside some mango chutney, the cucumber salad, mint, coriander & lemon and natural yoghurt!
